moutarde<\/strong><\/h3><p>La <strong>moutarde<\/strong> est l&#8217;un des <strong>plus anciens condiments<\/strong> utilis\u00e9s dans le monde. <strong>Son nom vient de l&#8217;\u00e9poque romaine<\/strong>, d&#8217;un condiment ferment\u00e9 dans du vin appel\u00e9 <em><strong>mustum<\/strong><\/em>. En effet, des <strong>traces de graines de moutarde<\/strong> ont \u00e9t\u00e9 retrouv\u00e9es <strong>entre 6100 et 5750 ans en Europe<\/strong> (<a href=\"https:\/\/journals.plos.org\/plosone\/article?id=10.1371\/journal.pone.0070583\" target=\"_blank\" rel=\"noopener\"><strong>Saul et al., 2013<\/strong><\/a>).<\/p><p>C&#8217;est l&#8217;une des premi\u00e8res \u00e9pices utilis\u00e9es pour modifier ou rehausser la saveur des aliments, c&#8217;est-\u00e0-dire l&#8217;un des premiers ingr\u00e9dients que l&#8217;homme a utilis\u00e9 pour transformer la saveur des aliments de base, tels que la viande. Personnellement, je le consid\u00e8re comme l&#8217;une des premi\u00e8res \u00e9tapes de l&#8217;art culinaire, ce moment o\u00f9 la cuisine cesse d&#8217;\u00eatre une simple survie pour devenir une culture et une cr\u00e9ation.<\/p><p>Il existe de nombreuses vari\u00e9t\u00e9s de moutarde dans le monde et de nombreuses fa\u00e7ons de la pr\u00e9parer : de la moutarde <strong>ferment\u00e9e dans la bi\u00e8re et le vin<\/strong>, comme la c\u00e9l\u00e8bre <strong>moutarde de <em>Dijon<\/em><\/strong>, aux <strong>versions fruit\u00e9es<\/strong> comme la <strong><em>Mostarda di Frutta.<\/em><\/strong> Mais aujourd&#8217;hui, nous allons nous concentrer sur la moutarde jaune, \u00e9galement connue sous le nom de <strong>moutarde am\u00e9ricaine<\/strong>, car c&#8217;est l&#8217;une des plus faciles \u00e0 pr\u00e9parer \u00e0 la maison. Et bien que <strong>son go\u00fbt soit moins intense<\/strong> que celui de nombreuses versions europ\u00e9ennes, elle n&#8217;en reste pas moins<strong> une recette savoureuse et un condiment polyvalent dans la cuisine.<\/strong><\/p><h3><strong> Moutarde jaune ou am\u00e9ricaine<\/strong><\/h3><p>La <strong>moutarde am\u00e9ricaine <\/strong>a \u00e9t\u00e9 <strong>invent\u00e9e en 1904 <\/strong>par<strong> George et Francis French<\/strong> et a \u00e9t\u00e9 servie pour la premi\u00e8re fois <strong>dans un stand de hot-dogs<\/strong> lors d&#8217;une <strong>exposition universelle en Louisiane, aux \u00c9tats-Unis.<\/strong> Cette version \u00e9tait destin\u00e9e aux palais am\u00e9ricains, qui n&#8217;\u00e9taient pas habitu\u00e9s au go\u00fbt fort et \u00e9pic\u00e9 des moutardes europ\u00e9ennes.<\/p><p>Il existe trois principaux types de graines de moutarde : les graines <strong>noires<\/strong>, les graines <strong>brunes<\/strong> et les graines <strong>blanches (jaunes)<\/strong>. La moutarde am\u00e9ricaine est fabriqu\u00e9e exclusivement \u00e0 partir de graines de <strong>moutarde blanche<\/strong>, dont la saveur est plus douce et moins intense que celle des graines noires et brunes. Pour cette recette, vous pouvez soit utiliser de la moutarde d\u00e9j\u00e0 moulue, soit acheter les graines enti\u00e8res et les moudre vous-m\u00eame \u00e0 l&#8217;aide d&#8217;un pilon et d&#8217;un mortier ou d&#8217;un moulin \u00e0 caf\u00e9 ou \u00e0 \u00e9pices pour obtenir une poudre fine.<\/p><p>Les graines de la moutarde blanche (jaune) ont une couleur naturellement beige p\u00e2le lorsqu&#8217;elles sont moulues. <strong>La couleur jaune caract\u00e9ristique de la moutarde am\u00e9ricaine<\/strong> est due au <strong>curcuma<\/strong>, une \u00e9pice qui a \u00e9t\u00e9 incorpor\u00e9e dans la recette pr\u00e9cis\u00e9ment dans ce but. Selon la quantit\u00e9 de curcuma ajout\u00e9e, la couleur peut varier : un peu plus et elle devient plus intense ; un peu moins, elle devient plus claire. Si l&#8217;on <strong>ajoute<\/strong> \u00e9galement <strong>du paprika<\/strong>, comme dans cette recette, on <strong>obtient une couleur plus ocre ou orange<\/strong>.<\/p><p>La moutarde jaune est l&#8217;un de ces ingr\u00e9dients polyvalents qui s&#8217;utilise dans bien plus de plats que nous ne l&#8217;imaginons, et pas seulement dans les hot-dogs ou &#8220;hot-dogs&#8221;, comme elle est devenue populaire en Am\u00e9rique du Nord. C&#8217;est un condiment qui rehausse la saveur des rago\u00fbts, des sauces et des marinades, et qui peut ajouter une touche sp\u00e9ciale aux plats les plus simples.<\/p><p>L&#8217;un des grands avantages de la pr\u00e9paration de la moutarde \u00e0 la maison est qu&#8217;<strong>elle permet d&#8217;ajouter le go\u00fbt piquant qui provient naturellement des graines de moutarde<\/strong>. Vous pouvez acheter la moutarde d\u00e9j\u00e0 pulv\u00e9ris\u00e9e ou moudre les graines vous-m\u00eame \u00e0 l&#8217;aide d&#8217;un moulin \u00e0 caf\u00e9 (ou \u00e0 \u00e9pices) ou d&#8217;un mortier et d&#8217;un pilon. <\/li><li><strong>Vinaigre<\/strong>: vous pouvez utiliser du vinaigre de canne blanc ou du vinaigre de cidre de pomme, qui donne un go\u00fbt plus doux.
